When talking wild game, distinct flavor may not always be a positive attribute. However, vibrant and colorful wood ducks deliver exceptional table fare with distinct taste and tenderness. I must admit to being a terrible duck hunter, favoring my prey to be much larger and slower moving. Fortunately, my husband is a good shot, so we get to indulge (wood duck season usually runs November 18 - 26 and again December 9 - January 28).
Crispy Duck Egg Roll Recipe A few simple ingredients make this egg roll dish an explosion of flavor. Ingredients
4 boneless duck breasts, skin on ½ cup light soy sauce 2 tbsp. canola oil 1 cup sweet onion, chopped 1 cup carrots, finely chopped 1 cup sweet peppers, chopped 1 cup mushrooms, chopped 1 tsp. hot pepper, finely chopped 1 tsp. ginger puree ½ tsp. black pepper ¼ tsp. sea salt 1 tbsp. honey Egg roll wraps
Crispy wood duck egg rolls are a favorite at our house. This recipe makes about 20 egg rolls. Directions
Start by marinating duck breasts in soy sauce, refrigerate for at least one hour. Pat the duck breasts dry with a paper towel and score the skin with a sharp knife. Set your burner on medium and heat canola oil in a heavy pan. Add sweet onions, carrots, sweet peppers, mushrooms, hot pepper and then stir in salt, pepper, and honey. Move the mixture to the side of the pan and add duck—the cooking waterfowl intensifies the flavor of the vegetables. Sauté until duck is partially cooked but still rare in the middle. Remove from heat and allow vegetable mixture to cool. Wrap duck breasts in aluminum foil and let rest for 5 minutes. Slice duck breasts diagonally across the grain about 1⁄8 inch thick. Lay out egg roll wraps in a diamond position. Place vegetable mixture and a couple slices of duck below the middle of the egg roll. Spread evenly, fold in the sides, roll, and seal with water. Pan fry the rolls in batches on medium heat turning once until browned and crisp. Keep warm in the oven, then serve with mango-pepper dipping sauce. Mango-Pepper Sauce Recipe Ingredients

1 large red pepper 2 fresh mangos, peeled and de-seeded ½ tsp. hot pepper 1 tbsp. brown sugar 1 tbsp. green onion, finely chopped 2 tbsp. fresh squeezed orange juice
Directions
I like to roast red peppers in a cast iron pan over high heat, but you can buy them in a jar already peeled, de-seeded, and roasted. If you choose the store-bought option, then rinse well before using in case they are packed in vinegar. Combine the peppers, brown sugar, green onion and orange juice and blend until smooth. After a taste test, add more ingredients to achieve the right texture and balance of heat and sweetness to your liking. Pair with your crispy duck egg rolls and enjoy!
