Seafood pot pie is a tasty version on a traditional baked dish.

This is a simple fish pie to make. Any robust flaky white fish will work. Here I use snapper, but other choices include redfish, grouper, snook or even croaker. I made this in two individual servings. To make four individual servings, just double the recipe or you can also fill up a 9-inch pie plate. If using phyllo dough (or filo dough), thaw sheets before starting recipe. Or try using puff pastry sheets instead.

Ingredients:

  • 2 large russet potatoes
  • 1 cup ricotta cheese part skim
  • ½ tsp. sea salt x 2
  • ½ tsp. black pepper
  • 1 Tbsp. extra virgin olive oil
  • 1 ½ cup finely chopped leeks
  • ½ tsp. sea salt
  • ½ tsp. black pepper
  • 1 tsp. paprika
  • 1 cup finely chopped sweet red peppers
  • 1 tsp. brown sugar
  • ¼ tsp. hot red pepper flakes

Boil potatoes with ½ tsp. salt until soft. Drain, add ½ tsp. salt, pepper and ricotta. Mash gently. Set aside.Sauté above ingredients in a large ceramic pan until leeks are soft. Remove from pan and set aside.Using the same pan add the following:

  • 1 Tbsp. extra virgin olive oil
  • 4 cups fish diced large (1- to 2-inch)
  • 3 Tbsp. fresh lemon juice
  • 1 Tbsp. soy sauce, low sodium
  • 2 Tbsp. fish or chicken stock or white wine
  • 1 Tbsp. capers

Directions:

  1. Sauté until fish is just cooked. Add leek mixture and gently stir. Mix 1 to 2 tsp. cornstarch in broth or cold water until dissolved. Stir into mixture on a low heat until just thickened. Set aside.
  2. Preheat oven to 350° F
  3. Spray individual pie plates with canola oil. Line with phyllo dough, four layers, spraying between layers.
  4. Fill with fish filling. Place potato mixture in a piping bag or just spread over the fish mixture.
  5. Trim off any phyllo dough above potato as it will burn before topping is done. Sprinkle breadcrumbs over potato mixture.
  6. Cook in oven until breadcrumbs are toasted. If you want it extra crisp, broil until desired color.
