As we're coming into the high season for summer wahoo fishing, we're looking to pad our wahoo recipes list.
Wahoo is great eaten raw--sushi or sashimi style--though many folks will freeze their fish for a few hours to firm it up completely before cutting and serving. Though you can only eat so much raw fish at one sitting (believe me, or if you must, try it yourself). So you're going to want a few different ways to prepare wahoo, when each fish caught might yield a few dozen pounds of meat.
