    Gator/Seafood sausage?? - 14 Nov, 2020

    We have a bunch of gator trimmings that were put aside and frozen.
    Plan is to grind with a mix of fatty pork and basic(leggs #10) sausage seasoning.
    I am going to experiment with a little and add some shrimp, scallops to the mix. Maybe some cajun spice, trinity, garlic, sage,basil.
    Anyone do a seafood sausage of sorts?
